The easiest way to build a set of ‘open’ doors would be to get some spare Rodeo doors (anything 1997 and before will fit), reuse the hinges and latches, and weld-up whatever works for you – either that, or…
Use those same spare doors, remove the innards, cut them down to the shape that you want, and then use some fleece and fiberglass resin (just like building a speaker enclosure) to fill-in the gaps — add a coat of Bondo, some sanding, and some paint — and there ya go.
