I’m trying to buy new grips. What size are the handlebars on my 1988 VT1100C Honda Shadow? I don't know how to measure them…

Hand grips on nearly all cruiser style bikes (including this one) are 1 in. 7/8 grips are for dirt bikes and some “crotch rockets”.
According to bikebandit.com, your bike has 1″ grips. Just like mine.

I'm willing to bet 7/8″ Thats pretty standard for Japanese bikes. Unless you have some kind of custom bars. You can measure with a tape, just put it against the bar end.
